Eggcellent

Eggs are also a new addition to my food vocabulary. Last year, couldn't get me to eat an egg for a million bucks. Since then, I've actually taken a liking to them. I'm still skeptical of the scramble and won't go near a hard boiled egg, but I do enjoy a fried egg. No yolks though -- blech.

Here's my new hearty breakfast craze!! Try it tomorrow.


Ingredients:
2 eggs (whites only)
your favorite salsa
avocado
low fat cheese

Pour your egg whites into a non stick pan. Flip once it starts bubbling. Once flipped, sprinkle some of your favorite low fat cheese. Once you're done, slice up an avocado and then scoop on some salsa. I don't recommend using a stereotypical "salsa", but rather something like pico de gallo that has more chunks of vegetables and less added junk. Season with salt and pepper to taste. Voila!
