Mini Ham and Cheese Quinoa Cups

Because of my busy schedule between classes and work when I am in school, I try to plan ahead when cooking meals and make things that I can eat as multiple meals. For example, these ham and cheese quinoa cups. They are easy to make and I was able to store them in my fridge for a few days to eat as breakfast or a mid-day snack. They're small cups packed with a huge punch of so many different flavors. Sometimes I worry that these kinds of things won't have a lot of flavor, but boy was I a huge fan of these guys. They can be eaten with any meal, and can be served hot or cold. AND THEY ARE SUPER HEALTHY! You can use pretty much anything that you have in your fridge at the time. Here's the recipe I followed:

Each cup: 3 grams of protein, and less than 50 calories. Serving size: 1 cup

Ingredients: (makes about 28 cups)
2 cups cooked quinoa (about 3/4 cup uncooked)
2 eggs
2 egg whites
1 cup zucchini, shredded
1 cup shredded sharp cheddar cheese
1/2 cup diced ham
1/4 cup parsley, chopped
2 tablespoons parmesan cheese
2 green onions, sliced
salt and pepper

Directions:
Preheat oven to 350 degrees.
Combine all ingredients in a bowl and mix.
Spray mini muffin tin with a non-stick spray, fill each cup with mixture.
Bake 15-20 minutes (you want edges of cups to be golden brown).
Let cool for 5 minutes before removing.

Here are some ideas for other twists on the recipe: broccoli cheddar, sundried tomato and pesto, mushroom and swiss, mozzarella and basil, THERE'S SO MANY!

Careful: they're dangerous... Once you eat one, you won't be able to stop!!!
