I served this as a side to the Lemon and Rosemary Chicken tonight. This was something new and delicious as well. I keep saying everything is delicious, but I mean it. I haven't run into a main or side dish that I haven't been pleased with so far. I'm not a huge potato fan but these ones were pretty good.
Ingredients:
1 bunch of asparagus, ends cut off
4 red bliss potatoes, and 3 russet potatoes each cut into fourths
4 tbsp of olive oil
3 cloves of garlic, minced
1 tbsp dried italian seasoning
1/8 tsp garlic powder
table salt, kosher salt, and black pepper
handful fresh parsley, chopped (about 1/4 cup)
1/2 cup parmesan cheese
Directions: Preheat oven to 400 degrees. Mix together asparagus, olive oil, garlic, italian seasoning, garlic powder, salt, pepper, and potatoes. Spray a roasting dish with oil, or your favorite cooking spray. Place in oven for 35-45 minutes. Stir halfway. Check potatoes with fork to reach desired tenderness. Add parsley and cheese once finished.
