Garlic Herbed Grilled Shrimp

If you know anything about me, it's that I'm always trying new things. I used to be relatively picky eater, but with my new-found love for healthy food came an appreciation for foods that I've never liked before. I can finally say WITH SO MUCH HAPPINESS that I LOVE shrimp! I have been craving it like crazy the last few weeks and finally caved today. Here's a super simple and delicious recipe I used tonight for dinner for my family.

Ingredients:
1 lb jumbo shrimp, frozen & raw (can also buy fresh if available)
olive oil
juice from 1/2 a lemon
a generous amount of McCormick Roasted Garlic and Herb seasoning

Directions: Prepare shrimp. Thaw package in warm water, de-shell and de-vein them. About 1 hour prior to cooking, create a marinade for the shrimp. In a large bowl, drizzle the shrimp with olive oil. Sprinkle a generous amount of the Garlic and Herb seasoning on the shrimp. Mix together or cover and shake to apply evenly. Keep adding seasoning to your liking, making sure that all of the shrimp is covered. Finish by squeezing the juice of 1/2 of a lemon on the shrimp and mix a final time. Store in refrigerator until ready to cook. Tonight, we used a large skillet on the outdoor grill. This allows you to be able to keep the shrimp moving as it cooks, ensuring that all sides cook. Cook through until the shrimp is all pink (approximately 20-25 minutes). Serve with your choice of vegetables or on top of a green salad.
