Banana Vanilla Chai Proats

Before a long run, or almost any workout, I love a good hearty bowl of oats. I used to be one to workout on an empty stomach, and since I discovered how detrimental that is to the body and how much BETTER my body responded when it had a solid breakfast, I'll never go back to that. My go-to pre workout food is always oatmeal, I feel like it just sticks to your insides and helps power through whatever workout you're doing.

A lot of the dishes that I post have so much versatility; you can adapt them to whatever flavors you're feeling that day and make countless combinations. Oatmeal is another one of those... You can do so many different things with oatmeal. This was not my original intended dish, I was trying to make zucchini oatmeal... Until I realized we were out of zucchini. I had to change the recipe on the fly, but it ended up working out just fine!



gluten free // serves 1

Ingredients:
1/2 cup bob's red mill gluten free oats
1 cup unsweetened coconut milk
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1 mashed banana
1 tsp molasses
1 scoop vega vanilla chai protein powder

Directions: Combine oats, coconut milk, and spices over medium heat. When it starts to bubble, add the mashed up banana and molasses. Cook for several minutes and remove from heat. Stir in protein powder, and mix well. Transfer to bowl and top with your favorite toppings. I used Purely Elizabeth cranberry almond granola, coconut flakes, Justin's maple among butter, pecans, and some apples for garnish.
