Sometimes I do get a little creative in my spare time... That's the beautiful thing about meal prepping ahead of time! This particular evening I was getting my breakfast and lunch together, and I knew I wanted some overnight oats. I checked out what I had for ingredients on hand, and the rest is history. Love this combo and have made it two times since!!

Ingredients:
1/2 cup bob's red mill gluten free oats
1/2 cup frozen blackberries
3/4 cup unsweetened coconut milk
1/2 a medium zucchini, shredded
drizzle of honey
a few crumbled pecans
1/2 tbsp chia seeds
Directions: combine coconut milk and frozen black berries in a food processor or blender. Once combined, add all other ingredients to a jar or bowl and pour the milk over it. Stir until mixed well. Refrigerate overnight. Add more pecans and fresh berries for topping.
