Funfetti Donuts with Coconut Buttercream Frosting

Recipe review time!!!

So, my day was interesting (still great, but interesting). I was up and out bright and early this morning for a 6:30am 90 minute Power workout at Orangetheory. It stinks getting up that early, but it feels SO good to look at the clock when you're out and realize you're done, and still have the entire day ahead of you. I popped home, rinsed off, and made myself a little breakfast to hold me over. I went over to my favorite (and the biggest) Farmer's Market in Charlotte to pick up my produce for the week. I was there much earlier today than last time, so I had a ton of choices. I got HUGE quarts of blackberries, blueberries, and strawberries, fresh herbs (HUGE BAGS FOR ONLY $1) like mint, sweet basil, and cilantro, sweet potatoes, a quart of fresh peaches (MY FAV), avocados, asian pears, beefsteak tomatoes, zucchini, and a cucumber. I also got my favorite olive cream cheese again! Yum!

I was in the overwhelming mood for a donut. A few weeks back, I visited a new place in Charlotte called Joe's Doughs for the first time, since they have gluten free donuts. I got a few... and they didn't last long (oops). They were SO GOOD. I drove myself there after the farmer's market, only to find out that, DUN DUN DUN.... They were out of gluten free donuts for the day :( I was so sad. I decided I could settle for another new find, and went to get myself an acai bowl topped with strawberries, banana, kiwi, pineapple, blueberries, and raspberries. It wasn't a donut, but it was still dang delicious!

Once I got home, I still wanted a donut. There's a recipe that I've been wanting to try, and I had all of the ingredients already.. So why not? I did run over to Walmart to get myself a donut pan... ONLY TO FIND OUT THEY DON'T HAVE THEM (clearly on a roll). I tried to get creative, but I couldn't even find anything at my place that I could make a hole in the dough. The batter was too thin to hold together that way, anyway. I was desperate, so I decided I'd use a muffin pan instead. They look a little different, but I'm positive they taste the same!

I cannot even express how happy I was with the way that they came out. I'm not a baker, by any means. You probably can see based on my posts that I prefer recipes that I can modify, not be exact with, and switch up. Baking is too scientific for me, and I've never been great at it. I was really nervous to try making these myself, but I'm so happy! These donuts were just as good as any donut I could have gotten in a donut shop. Once the glaze had a chance to set up, they were perfect. Just what the doctor ordered, and I FINALLY got my donut!
