Guilt Free Cheeseburger Tacos

I think that the title of this post pretty much speaks for itself. We all love cheeseburgers, we all love tacos... why not combine them? 100% guilt free! It may sound crazy, but I promise you that it's achievable. This idea came to me one day at work. 

me: I want a cheeseburger. 
me: No, I want tacos. 
me: I'll make burgers tonight.
me: But tacos...
me: I'm making tacos.
me: BURGER.

Sooo rather than continuing to argue with myself, the lightbulb moment happened. WHY NOT BOTH? These puppies were seriously so easy. I had most of the ingredients on hand, so it didn't really require extra shopping. You can also customize them to include whatever burger or taco toppings you like. They're made with collard leaves and ground turkey-- super delicious! 

This is a great recipe for a quick and easy weeknight meal. For all my meal preppers out there, you can totally make the burger mix ahead of time and assemble tacos throughout the week for lunches. It takes 2 seconds!


gluten free // 

ingredients:
1 package 96% lean ground turkey 
salt & pepper to taste
garlic powder + onion powder
generous drizzle of Trader Joe's organic ketchup
generous drizzle of Organicville yellow mustard (add the ketchup and mustard to taste. I love mustard so I added a lot)
diced pickles
1 cup spring mix
2-3 collard leaves, cut in half - stems removed if preferred
6 cherry tomatoes, diced 
1/4 cup cheddar/monterey shredded cheese or cheese of choice

directions: heat olive oil in a large skillet. once heated, add ground turkey to the skillet and season with onion powder, garlic powder, salt, and pepper. once the meat is cooked through, add in the ketchup and mustard and stir to combine. in the meantime, prepare lettuce wraps and dice vegetables. lay spring mix on each lettuce wrap for some extra greens. place about 2 tbsp of meat in each "taco", and top with cheese, diced pickles, and tomatoes. then you can fold the tacos up and bon appetit! 
serving suggestion: goes great with sweet potato fries!
