Another overnight oat recipe coming to you for a super easy weekday breakfast. I love mixing it up with these jars; combining new flavors, adding different crunches, and loading them up with more superfoods.
This entire jar takes about 3 minutes to throw together; the longest part is actually dicing up the fruit. And I'm not kidding, it's as easy as throwing it all together, giving it a stir, and putting it in the refrigerator. This one had a great balance; it had it's own natural sweetness from the pear, kiwi, and strawberries, a good crunch from the coconut and the pecans, but it all came together well and made a delicious bite from first to last. On top of all the great flavors; I added a common superfood, chia seeds, for extra nutritional boost. I topped it off with a drizzle of honey to give it a bit more sweetness, and voila. A delicious meal out of a jar for busy weekday mornings at work!
gluten free // vegetarian
ingredients:
1/3 cup Bob's red mill gluten free oats
1/3 cup Silk unsweetened coconut milk
1/2 of a red pear
2 strawberries
1/2 of a kiwi
1 tsp chia seeds
handful of chopped pecans
sprinkle of unsweetened coconut flakes
drizzle of honey
directions: combine all ingredients and stir well. store in the refrigerator overnight. yes, it's that easy. :)
