Bruschetta Chicken

Apologizing in advance for my lack of picture for this dish. It slipped my mind while I was cooking! I made this for some friends this past weekend and it was a change from what I normally make and was a really good way to eat chicken

Ingredients:
1/2 cup flour
2 beaten eggs
4 boneless, skinless chicken breasts
1/4 cup grated parmesan cheese
1/4 cup crushed garlic croutons
1 tbsp butter, melted
2 large tomatoes
3 tablespoons fresh minced basil
2 minced garlic cloves
1 tbsp olive oil
salt and pepper to taste

Directions: Preheat oven to 350 degrees. Grease a baking dish. Place flour in one bowl, and eggs in another. Dip chicken breasts in flour, then egg. Place in dish. In separate bowl, combine cheese, crushed croutons, and melted butter. Sprinkle on chicken. Cover loosely with foil, and bake for 30-40 minutes. You want the top to be browned. Make sure chicken is cooked through! In meantime, chop tomatoes and combine with olive oil, basil, garlic, and salt and pepper. Spoon over chicken and place back in for 5-7 minutes.
