"Smashed" Potatoes

On my new potato kick, I've discovered my new favorite way to enjoy them. They were simple yet flavorful and a healthier option to any other kind of carbo-loaded side.

Ingredients:
12 new potatoes
olive oil
kosher salt, pepper to taste
your favorite spices

Directions: Boil potatoes until fork-tender. Mine took about 30 minutes, but check them periodically because it depends on their size. In the meantime, preheat oven to 450 degrees. Drizzle a baking sheet with olive oil generously. Place potatoes one by one on the sheet and smash with a potato masher. You shouldn't have to try too hard to do this if they are tender enough! Sprinkle on some kosher salt and pepper to taste, as well as any of your favorite spices. I used an italian garlic rub that I put on steak sometimes.
