Mexican Quinoa Salad

In honor of the lack of nice weather we having, I decided to post a summery dish. We all need a little summer in our lives sometimes. I discovered this dish last summer, at a friend's house. His mom introduced me and that's when I became hooked on quinoa. Add some spicy, and I'm addicted. This is one of my favorites and really easy to throw together.

Ingredients:
1.5-2 cups cooked quinoa
1/4 cup olive oil
2 limes, juiced
1 to 2 tsp cumin (depending on how strong you like it)
1 tsp salt
red pepper flakes
fresh cilantro
green onions
tomato
cucumber
peppers of your choice

Directions: Make the quinoa as directed. Make the dressing using the olive oil, lime juice, cumin, salt, and red pepper flakes. The red pepper flakes are where you find alot of heat, so if you aren't into that, you can leave them out. Pour the dressing over the quinoa (preferably cold quinoa). You can add any of your favorite vegetables to this dish. I usually use a cucumber, a tomato, and sometimes yellow and red peppers. You can kind of eyeball it depending on the ratio of quinoa to veggies you would like. Pop it in the fridge and eat it all week!
