Vegetable Fried "Rice"

Who doesn't love Chinese food? I know I do, but I hate that guilty, way-too-full feeling that follows it. The rice is my favorite part. Tonight I satisfied my rice craving by making a healthier version. I substituted rice for quinoa, and voila! Vegetable fried rice!

Ingredients: 
2 tbsp olive oil
2 large eggs, beaten
2 cloves garlic, minced
8 oz. mushrooms, sliced
1 head broccoli, cut into florets
1 chopped zucchini
1/2 cup frozen corn
1/2 cup frozen peas
2 carrots, peeled and chopped
3 cups cooked quinoa 
1 tbsp fresh grated ginger
3 tbsp soy sauce
2 green onions, sliced

Directions: 
1. Heat 1 tbsp olive oil in a skillet. Add eggs, fry until cooked through but only flip once (2-3 mins per side). Dice into small pieces once cooled off a bit.
2. Heat remaining tbsp olive oil in new skillet. Add garlic and onion and sauté while stirring until onions become cooked (4-5 mins).
3. Add mushrooms, broccoli, and zucchini. Cook until tender.
4. Add corn, peas, carrots, and quinoa. Cook until heated through.
5. Add ginger and soy sauce, mix until combined. Cook about 2 minutes.
6. Stir in green onions and eggs. Serve while hot!
