Mediterranean Quinoa Salad

This is one of those dishes that I cooked and prepped yesterday. I just popped it in the fridge once it was done and that way I can take out individual serving sizes for lunch to take to work. Today I forgot my lunch on the kitchen counter (yeah, I was not happy), so I ended up eating it for dinner. It's an easily accessible side dish though if you want to make it ahead of time..


Ingredients
1 cup uncooked quinoa
1 cup tomato, sliced
1 cup cucumber, sliced
1/4 cup red onion, diced
1/4 cup kalamata olives
1/4 cup crumbled feta
3 tbsp lemon juice (1 lemon)
3 tbsp olive oil
1/2 teaspoon oregano
1 clove garlic, minced
salt and pepper to taste

Directions: Cook quinoa as directed. In the meantime, slice vegetables and add them all to a bowl. I would recommend letting the quinoa cool before adding the vegetables. Once cool, pour in vegetables. Drizzle in the olive oil, lemon juice, oregano, garlic, and salt and pepper. Stir well and cool!
