Skinny Chicken Pesto Bake

With the pesto that I pre-made last night, I prepared this pesto bake tonight. I'm so happy I did this! It made meal prep tonight a lot easier. Try this for a light chicken dish!

Ingredients:
2 boneless, skinless chicken breasts
salt and pepper to taste
4 tsp prepared pesto
1 medium tomato, sliced thin
6 tbsp shredded reduced fat mozzarella cheese
2 tsp grated parmesan cheese


Directions: Slice chicken breasts to create 4 thin cutlets. Season with salt and pepper. Preheat oven to 400 degrees. Line baking dish with parchment paper. Place chicken on sheet. Spread 1 tsp of pesto over each piece of chicken. Bake for 15-20 minutes (making sure that chicken is cooked through). Remove from oven, top with tomatoes and mozzarella cheese. Bake for additional 3-5 minutes or until cheese is melted.
