Again, this recipe is nothing you haven't heard of already. What I didn't realize, however, is how easy they are, how much you can do with them, and how incredibly delicious they are. These are so easily modifiable... You can go greek, buffalo, southwestern, cold, hot, caeser, Asian/teriyaki, etc. The possibilities are endless. There's no surprise which direction I went--buffalo all the way. TOTALLY willing to change it up though. Another great thing about these is you can truly throw them together with anything you have laying around, and super quickly. Also, I used the leftovers for a cold wrap at work the next day. Still just as delish. Here's what I did for mine, which served 2:
Ingredients:
2 chicken breasts, sliced in half length wise (4 cutlets total)
sprinkle of onion powder
sprinkle of garlic powder
sprinkle of salt and pepper
lettuce
tomato
1-2 tbsp buffalo sauce, depending on how hot you like it
chopped black olives
sprinkle of light cheddar cheese
1 tbsp light ranch dressing
1 package Joseph's Flax Oat Bran & Whole Wheat Lavash Bread
Directions: Slice chicken in half length wise. Lightly season with onion powder, garlic powder, and salt and pepper to taste. Cook chicken completely through, flipping when white line appears halfway through. Approximately 10-15 minutes, depending on thickness. In the meantime, prepare your ingredients. Chop lettuce/greens, tomatoes, olives. Spread onto lavash. Drizzle ranch onto those ingredients. Once chicken is done, slice into horizontal strips. Pour buffalo sauce onto chicken and mix together in bowl. Throw in cheese if using while it is hot so it has the opportunity to melt. Scoop chicken onto veggies, and roll up lavash bread. I folded it like you would fold a normal wrap, leaving one side open (obviously I ate that side first).
Now before you go rolling your eyes at me about the bread that I used -- give it a chance. This is one of my FAVORITE kinds of bread. You may be thinking, "flax seeds, oats, bran, blech!" but I promise you, you can't even tell. I think that wheat anything has so much more flavor than plain white bread products anyway, but I'm telling you, this is something you want in your grocery cart. They are super soft, and right on the package they say "May help protect your heart while losing weight". They have zero trans-fats, are reduced fat and reduced carb, and high in protein. The flax in these wraps help the body get omega-3, which is a cholesterol reducer. A serving size is 1/2 of a piece, at 50 calories. That obviously means that a whole one is 100 calories. ONE slice of wheat bread is 80 calories. You do the math!
