Spicy Chicken and Avocado

So unbelievably pleased with how simple and absolutely delicious tonight's meal was... I'm definitely going to keep these ingredients on hand (not that I really have to try because I ALWAYS have avocados and chicken), but my goodness this is one of my new favorites. If you're not into spicy foods (MOM)... this might not be a meal for you. But I for one LOVED it. Also, I'm not on this diet plan but for those of you dieters out there, this meal fits in with the South Beach Diet Phase One, and it's also a Weightwatcher's meal.

Ingredients:
1 large avocado
1 small jalapeƱo
1/2 teaspoon chopped fresh cilantro
the juice of 1 or 2 small limes
3/4-1 lb of chicken breasts (I sliced my chicken breast into 4 small tenders)
blackening seasoning.. (here's where I improvised = MIRACLE. I used cayenne pepper, garlic salt, and cumin!!!)
1 tsp olive oil for cooking
salt and pepper to taste

Directions: Chop the cilantro, jalapeno, and avocado. Place in a bowl. Mix in lime juice, salt and pepper. Heat a skillet over medium to medium high heat and add the oil. Place the chicken in the pan. I sprinkled on my seasonings to the raw side here. After cooking halfway, I flipped my chicken pieces and applied the seasonings to the other side. Once fully cooked, serve with the avocado mixture on top.

The chicken was so good that, normally, I make a whole breast and only actually eat half. Tonight I ate it all. Yep.
