I told you I haven't forgotten! Tonight's lazy Sunday meal was a hearty Turkey and Spinach Quinoa Casserole. I could tell before I even started cooking that it was going to make way too much, so I decided to cut the recipe in half. I really enjoyed it though
Ingredients:
2 cups dry quinoa
2 lbs extra lean ground turkey
1 medium onion, chopped
4 medium garlic cloves, minced
4-5 large handfulls of spinach, chopped
2 cups tomato sauce
1 cup whole wheat bread crumbs
3 cups light cheddar or mozzarella cheese, shredded
1/4 tsp thyme, dry
2 tsp basil, dry
salt and pepper to taste
cooking spray
green onions and diced tomato for garnish
Directions:
1. Cook quinoa according to package. You want to slightly undercook it. Once cooked, put in mixing bowl to the side.
2. Preheat oven to 375 degrees, prepare baking dish with spray oil and set aside.
3. Preheat skillet on medium. Add turkey and sautee, separating large pieces with spatula. Drain excess liquid and add to bowl with quinoa.
4. Spray pan with cooking spray again. Add onion and garlic. Fry until golden brown. Add spinach and saute until wilted. Add to bowl.
5. Add tomato sauce, bread crumbs, 2 cups cheese, thyme, basil, salt, and pepper. Mix to combine.
6. Transfer to baking dish and sprinkle with remaining cheese. Bake for 25 minutes.
7. Optional: Finish with tomato and green onion. Serve!
