Grilled Garlic-Basil Rubbed Pork Chops

I've made this dish for my family twice now. It's a nice change for us from the typical chicken/steak/beef rotation. I always believe that buying meat with bone included allows it to stay much more moist and flavorful, and I stand by my decision with pork especially. This is a super yummy summer evening after work dish.

Ingredients:
4 bone-in pork loin chops, 3/4 inches thick
2 garlic cloves, peeled
1 cup fresh basil leaves, packed
2 tablespoon fresh lemon juice
2 tablespoons extra-virgin olive oil
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper

Directions: Drop garlic into a running food processor to mince it. Turn it off, and add the basil. Process until chopped. Add lemon juice, oil, salt, and pepper until it becomes a thin wet rub. Spread the mixture on both sides of the pork chops. Allow meat to sit out for 15 to 30 minutes. Grill pork chops over medium heat, turning until cooked to your preference (I don't eat rare meat, so I cooked it thoroughly).
