Kielbasa, Pepper, Onion, and Potato Hash

For a quick week night dinner, this is a great option. It's a hearty but healthy hash dish that doesn't really require any additional sides. Switching to turkey kielbasa makes it healthier, and I personally couldn't taste any difference. You can make this your own dish by adding any other types of vegetables you want. I love peppers, so I used some of each color. I was pretty impressed by how simple it was, but it still tasted great!

Ingredients:
1 14 oz. package turkey kielbasa, cut into 1/4 inch rounds
1 green bell pepper, diced
1/2 yellow, red, or orange bell pepper, diced (I used some of all three!)
1 onion, diced
3 small or 2 large potatoes, peeled and diced
olive oil
salt and pepper

Directions: In skillet, heat 2 tbsp olive oil over medium-high. Add potatoes and season with salt and pepper. Fry until golden brown and cooked through (appx. 8-10 minutes), stirring to cook evenly. In separate skillet, brown sliced kielbasa for about 5 minutes in 1 tbsp olive oil over medium high heat. Remove kielbasa from pan when cooked through and set aside. Add peppers and onions to the skillet, and season with salt and pepper. Cook for additional 5 minutes, or until soft, stirring frequently. Add cooked potatoes and kielbasa to skillet with vegetables, and mis together.
*You can cook the potatoes and kielbasa together, but the potatoes tend to become more crispy if you do it separately.
