Sweet potatoes. I just recently began appreciating the taste of them. I did a little research on sweet potatoes and was pretty shocked to learn how great they are for you. Here's some stuff I found that may persuade you to make them a more regular item in your diet, from The Life Force Diet by Michelle Schoffro Cook, PhD. They're high in vitamin B6, vitamin C, vitamin D (energy, mood, bones, heart, skin and more), iron, magnesium, potassium, and have natural sugars for slow release and long-lasting energy. They are high in carotenoids (antioxidants).
That being said, if you're a french fry lover, this is the recipe for you. Curb those cravings with this much healthier version! I love spicy, including the cumin and chili powder in this recipe. Great flavors and a pretty powerful bite! Sorry that I don't have a picture for this one.
Ingredients (serves 4):
2 medium sweet potatoes, washed, cut lengthwise into strips
1 1/2 tbsp olive oil
1 tsp ground cumin
1/2 tsp chili powder
1/4 tsp salt
1/2 tsp onion powder
Directions: Line cookie sheet with foil/parchment paper. Preheat oven to 450 degrees. In mixing bowl, combine all ingredients. Mix to evenly coat potatoes. Place onto lined cookie sheet, making sure to leave space so they cook evenly. Bake for 20 minutes, until crispy, turning every 5-7 minutes.
