Cilantro-Lime Cucumber Salad

For all my spicy lovers out there, this is a side dish for you! Cucumbers, despite their normal blandness, are one of my favorite snacks. Add some jalapeño and red pepper flakes (which I put on everything), and I pretty much ate this entire cucumber dish myself. I love the heat this dish brings, but at the same time the coolness of the cucumbers takes it down a notch. It's the perfect mix of flavors, and if you don't finish it all, you can throw it on your salad or just in the fridge for another night that week!! (This is pictured with the Hawaiian Butter shrimp, and the roasted smashed potatoes with avocado aioli)

Prep Time: 5 min // Total Time: 5 min

Ingredients (serves 5-6):
1 jalapeño, seeded and diced
2 cloves garlic, minced
3 tbsp fresh lime juice
1/4 teaspoon crushed red pepper
1/2 tsp salt, or to taste
black pepper to taste
3 tbsp olive oil
2 cucumbers, finely sliced
4 tbsp minced cilantro (to taste)

Directions:
Dice the jalapeño and garlic, place in medium sized bowl. Add 3 tbsp of fresh lime juice, crushed red pepper, salt, and pepper. Whisk to incorporate oil and set aside. Finely slice the cucumbers (using a mandolin if you have one). Add the cucumbers to the dressing and stir together. Finely mince the cilantro and add it to the bowl. Stir to combine. You can either let it sit in the fridge to marinate for a couple hours, or serve immediately.
