I'm back! I know it's been a while since I've posted any blog updates (sorry, life kind of got in the way...). I've been a lot more active on Instagram lately - (follow me @missnewfoodie__) but I'm going to go back to sharing my recipes here for everyone to see.
Tonight I was in the mood for a sweet treat, but I was also really craving fruit. This is no surprise, seeing as I eat a ton of fruit everyday! I had some strawberries left in the fridge to use up, and I've been on a crazy banana kick lately. I bought a bunch of bananas, peeled them, and froze them to throw in smoothies on the fly. I was getting frustrated with how soupy my smoothies were coming out and felt like ice watered them down too much. Frozen fruit is the perfect add- keeps it cold, creamy, and thick.
I also like to make the "smoothie", pour it in a bowl, and pop it in the freezer for however long I can wait to eat it. I like to let it set up before I add all my toppings (which really makes the whole thing!)
Take a look at what I used tonight:
Ingredients:
1/2 scoop vanilla whey protein powder
1/2 cup unsweetened coconut milk
1 frozen banana
4 fresh strawberries
Toppings (Optional):
1/2 tsp Woodstock unsweetened organic coconut flakes
crumbled pecans
dried unsweetened cherries
Van's cranberry almond granola clusters
Directions: Combine all ingredients, blend until smooth. Pour in bowl and let set up in freezer for 10 mins-1 hour. Top as you please!
