I'm a lover of all things easy. I make some sort of protein bites every week, not only because it's more cost effective than bars, but mostly because they're SO easy, super versatile, and always come out tasting great. I pop extras in the freezer for days when I'm feeling not-so-creative, and also because I often get sick of eating the same thing multiple days in a row. Freezing them is a great option, so you can rotate through them and change it up! I made this cookies several weeks ago, but took two of them out of the freezer this past week for breakfast, reminding me how tasty they were. I ate them for breakfast this time, but for dessert the first time I made them. That's the other great thing about these types of cookies: you can eat them for breakfast, dessert, pre-workout, post-workout, or as a side with lunch! Whip these together in ten minutes. I promise you that the hardest part about this recipe will be not eating the entire tray at once.
gluten free // vegan
Ingredients:
3 cups gf oat flour, or quick oats ground up (Bob's Red Mill is a good option)
2 scoops vanilla protein powder of choice - I use Sunwarrior Warrior Blend, vanilla
1/2 tsp sea salt
1/2 cup organic peanut butter
1/2 cup honey (brown rice syrup for vegan)
1/2 cup unsweetened coconut milk
Nestle's gluten free dark chocolate chips
Nestle's gluten free white chocolate chips
good handful of dried cranberries
Directions: pulse oats in a food processor until they become flour. Mix together flour, protein powder, and salt. In separate bowl, combine honey, peanut butter, and coconut milk (may need to melt down PB to get it to stir). Stir to combine. Mix wet and dry ingredients. Stir in chocolate chips and craisins. Using cookie scoop (I used medium), scoop onto cookie sheet lined with parchment paper. Flatten with a fork, and set in fridge for about 30 minutes. From here, you can ration them out if you are going to eat them in a few days, you can eat the whole pan (if you choose), or you can freeze!
