Row, Row, Row Your (Overnight) Oats

There's just no getting around it. The convenience/pure simplicity of overnight oats... If you're not making them, you're SERIOUSLY missing out. We're all human, we're all busy, but in my opinion (and I know this isn't everyone's cup of tea) that's no excuse not to eat well. I am 100% serious when I say that making overnight oats is quicker than the drive-thru line at Dunkin Donuts (you better believe I would know). You can do it the night before, or two nights before, and bring your toppings with you to add when you're ready to eat them. And just like pretty much every other food item I make, there's so many different varieties. You can make any of your favorite flavored oats. In the morning, all you need to do is open the fridge, grab your jar, throw it in a bag and start your day. I like to call them throw-and-go. Chocolate Chip Banana Bread Overnight Oats



gluten free // dairy free

Ingredients:
1/4 cup Fage greek yogurt, plain
1/2 cup Bob's red mill gluten free quick oats
2/3 cup unsweetened coconut milk
1 tablespoon chia seeds
pinch of salt
1 tbsp honey
1/2 banana, mashed
2 tbsp Nestle dark chocolate chips

Toppings of choice: pecans, chocolate chips, banana, walnuts, granola, coconut flakes

Directions: Combine all ingredients and mix well. Transfer to mason jar, seal, and refrigerate overnight. Add toppings when ready to eat (Yes, it's that easy ;)

Peanut Butter Overnight Oats
(caution: may or may not have tricked me into thinking it was dessert)


gluten free // dairy free

Ingredients:
1/2 cup unsweetened coconut milk
1 tbsp chia seeds
2 tbsp Justin's maple almond butter
1 tbsp real maple syrup
1/2 cup Bob's Red Mill gluten free oats

Toppings: pecans, banana coins

Directions: Combine all ingredients and mix until consistency of your choosing (you can choose to mix in the PB or leave some less mixed!) place in sealed mason jar in the fridge overnight. Add toppings when ready to eat!
