Pumpkin Pie Bliss Balls

As promised, here's another faaabulous energy bite recipe. Who doesn't love pumpkin pie in March? I know I do! These were such a comfort food for me; they reminded me of October and tasted amazing! It's another one of those "so simple it's stupid" type of recipes. In those 5 minutes you spent trying to remember where you put your car keys; you could have made some yummy balls!



gluten free // 10 servings //

Ingredients:
1 cup pitted dates
1/2 cup pecans
1/3 cup pumpkin puree
1/4 cup unsweetened coconut flakes + more for rolling
2 tsp vanilla
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
pinch of salt

Directions: Soak dates in water for 10 minutes. Drain. Pulse pecans in a food processor until they start to break down. Add in the rest of the ingredients and pulse until smooth. Let chill in refrigerator for 30 minutes. Roll into balls (I used a medium pampered chef cookie scoop), and roll in extra coconut. Refrigerate.
