Easy Beef and Broccoli

I don't think I've ever met someone who doesn't crave Chinese food every once in a while. I just can't bring myself to eat it frequently because of all the bad stuffs / msg. That doesn't mean I don't crave it. Something important to remember is that you can still have all the flavors you love, simply by making a few modifications and adding some healthier options. This one was a hit with the family; an easy, throw-together beef and broccoli dish over brown rice for me, and white for the rest of the fam. It's a super easy dish to add to your work week dinner list.

// gluten free

2 1/2 tbsp olive oil
12 oz broccoli florets
24 oz rost top round of beef
water for boiling

Marinade:
1 tbsp soy sauce (gluten free)
2 tsp sherry wine
1/2 tsp sesame oil
2 tsp corn starch

Sauce:
2 tbsp soy sauce
2  tsp corn starch
4 tbsp water
1/2 tsp sugar
1/4 tsp sesame oil

Directions: Combine ingredients for marinade and let meat marinate for appx 30 minutes. Boil water with a few drops of olive oil and blanch broccoli florets for about 10 seconds. Remove immediately, drain, and set aside. Heat 1 tbsp olive oil in a skillet. Stir fry the beef until it is cooked through. Add broccoli and sauce. Stir to combine. When sauce thickens, serve immediately over rice of choice.
