Organic Red Pear and Ginger Baked Protein Oats

You all know how much I love my oats!!! Overnight, stove-top, baked... You name it. My mom came home from running errands one morning and told me she got me something at the store to try. She threw me an organic red pear. I figured there would be no better way to put it to use than make an oatmeal dish out of it! This dish was SO good. It came out with a cake-like consistency, so fluffy. It tricked me into thinking I was eating cake for breakfast!


// gluten free

1/2 cup bob's red mill quick oats (gluten free)
1 tsp chia seeds
3/4 tsp ginger
2 tsp cinnamon
1 tsp baking powder
1 scoop of vega vanilla plant protein
1/2 cup unsweetened almond milk
2 tbsp crushed pecans
1 tbsp justins maple almond butter
3/4 diced organic red pear
Directions: Combine all ingredients in a greased (with spray coconut oil) baking dish. Sprinkle with coconut sugar and bake at 350 degrees for 35 minutes. Drizzle with justin's maple almond butter, and more crushed pecans.
