Blackberry Ricotta Pizza

Here's a simple, yet sweet and filling pizza recipe that is a twist on the tradtional pizza. With no marinara, it's a white pizza topped with cheese, kale, and fresh blackberries. If you've ever tossed around the idea of fruit on your pizza, this is the recipe for you! The cheese helps to cut the acidity of the berries and creates a delicious bite. Pictured here is a relatively small pizza that I made, about ten inches. This lasted about 2.5 servings! It kept well, and I love cold pizza... so no reheating necessary :)

ingredients:
1 box enjoy life gf pizza crust (you can use your favorite pizza crust)
1 tbsp olive oil
sea salt
2 tbsp ricotta
2 pkg Belgioso mini mozzarella balls
1 cup blackberries
1 stalk kale, stemmed and torn
sprinkle of fresh basil

directions: prepare pizza crust according to box. *tip - the crust i used was delish, but it made a TON of dough. the box says it makes appx. 2 10-inch pizzas. I made the dough, divided it in half, and froze one half for later. spread the dough out to your desired thickness, brush with olive oil and a dash of sea salt, and cook according to directions. with about ten minutes left of baking time, remove from oven and spread out the ricotta, mozzarella balls, kale, and blackberries. bake for additional 10 minutes, and top with a sprinkle of basil before serving!
