Another recipe share time! Forgive me while I fangirl so hard over this one. It was a COMPLETE gamechanger. When I called this post Honey Nut Cheerio Pancakes, I meant it. They're literally made from honey nut cheerios, ground into a flour. Mind. Blown.
These pancakes had sooo much flavor that they didn't even need syrup. I added some extra cheerios for a crunch, but with all the honey nutiness, they were absolutely amazing. This is perfect for all my gluten free pals out there - because, great news, CHEERIOS ARE GLUTEN FREE! I'm not sure if I love being able to feel normal by eating them that's been making me so obsessed with them lately, or what. But, as soon as I saw the name of these babies, I whipped em' up real quick. I posted this on instagram and it was a popular one; so I hope you all enjoy them as much as I did!

ingredients:
1 + 1/3 cup honey nut cheerios
1/2 cup bob's red mill 1-to-1 gluten free flour
1 egg
1 cup coconut milk
1/2 tsp vanilla
2 tsp baking powder
1/4 tsp salt
directions: place cheerios in food processor and pulse until they become the consistency of flour. mix cheerio flour, gluten free flour, baking powder, and salt in a bowl. in a separate bowl, combine egg, coconut milk, and vanilla. once beaten, mix wet and dry ingredients. heat a skillet with coconut oil and spoon enough batter for 4" pancakes. when they start to bubble, flip. *tip, you can freeze the extras!
