Salmon with Strawberry and Avocado Salsa

Fruit salsas and fish are a highly underrated combination! There's nothing like a perfectly cooked and spiced salmon filet topped with a sweet and fruit salsa, especially during the dog days of summer. And the dog days of summer are surely upon us down here in Charlotte. With 95+ degree days basically everyday, my go-to meals have been things that are light, refreshing, and come together easily. This was totally one of those dishes! It required very minimal prep time and was ready in about 30 minutes.

All my New Hampshire friends, I hear the weather's been pretty hot! This is a perfect dish for you to try at home this week to combat the heat and still feel refreshed! I served it with kale chips (dressed in vinegar and sea salt and cooked at 350 for 15 minutes), and quinoa cooked in vegetable stock, drizzled with lime juice, cilantro, and red pepper flakes.

ingredients:
2 6 oz. salmon filets
2 tbsp coconut oil
1/4 tsp paprika
1/4 tsp garlic powder
1/8 tsp onion powder
1/8 tsp cumin
1/8 tsp sea salt
1/2 avocado, cubed
4 strawberries, diced
1 tsp agave nectar
drizzle of olive oil


directions: brush salmon filets with melted coconut oil. combine all spices and rub on salmon. place in the oven for 40 minutes at 350 degrees. while the salmon is cooking, prepare the salsa. dice the avocado and strawberries, and then add olive oil and agave nectar. stir until combined. when the salmon is done, top with salsa and place with sides of choice!
