For some reason, nothing sounds better on a hot summer day spent poolside than some nice juicy watermelon. For some reason, when I was a kid, I never ate watermelon. I always thought it had no flavor (I seriously sometimes wonder if I was abducted by aliens when I was little, because like WHAT). Now, I can't get enough of it. The best part about watermelon is that such a large percentage of it is water, so it's a great way to help stay hydrated! I could probably eat an entire watermelon in one sitting. Or at least a half. Definitely a half.
Here's another "sweet" treat turned savory. Watermelon goes with so many different flavor combos. I brought together the sweetness of the watermelon with the saltiness of feta and kalamata olives, the tanginess of balsamic vinegar, and the earthy taste of fresh mint leaves. This flavor combo was sooo good. And, not to mention, this was a super easy snack to whip up and convenient enough to take with me poolside. Helped me stay hydrated and satisfied my growling stomach as a pre-dinner pick-me-up!

ingredients:
1 slice of a whole watermelon (you can also do this with a half, quarter, etc), cut into 6ths
1 spoonful of kalamata olives, sliced
1 tsp fresh mint leaves, chopped
sprinkling of feta to your liking
1-2 tbsp balsamic vinegar or glaze, depending on how much you like
directions: slice your watermelon as appropriate. if you are using regular balsamic vinegar, you need to reduce it down and thicken it. bring it to a gentle bubble in a pan, and then reduce to a simmer. you want to stir it VERY frequently to help it thicken. once it is thick enough for your preference, you can let it cool for a bit. in the meantime, top your watermelon pizza with feta, kalamata olives, and mint. drizzle the balsamic over once it has cooled, and enjoy!
*tip - I found that if you have extra, it doesn't keep well. I don't recommend preparing large amounts if you don't think it will get eaten! you can always save all the toppings and put it together later.
