Ok, I'm basically a chip-a-holic. I would take a bag of potato chips over a chocolate bar ten out of ten times, end of story. Clearly I can't just sit with a bag of chips everytime I get a salt craving though. So, with my new found love for kale, I decided what better way to satisfy my salt and vinegar chip craving than with some leafy greens?
I've never tried anything like this before, so I was a little hesitant. But in my new spirit of trying new things, I figured, why not? THEY'RE ADDICTING.
Ingredients:
1 bunch of kale (10 handfuls) with leaves trimmed and stems ripped away
3 tbsp olive oil
1 tbsp vinegar (any kind)
kosher salt
Directions: Preheat oven to 300 degrees. Wash kale, tear leaves from stems and throw them in a salad spinner. Dry well. Place leaves (in bite sized pieces) in bowl. Whisk olive oil and vinegar together and pour over the kale leaves. Massage the dressing into the leaves with your hands and make sure it gets all over them. Spread out in a single layer on a tray (don't force them all into one tray, you may need to use multiple batches). Sprinkle kosher salt over the top and bake for 10-15 minutes. Turn the leaves over halfway through the baking process.
