So I'm back at school, and all about the plan-ahead meals. Today was a holiday so I spent my morning (aside from getting settled and unpacking) cooking and doing meal prep for the week. I have lunch everyday on the go so I needed something that I can take with me easily. I'm a huuuuuge chicken salad fan, and let's face it... You all know how I feel about avocados!!
Ingredients:
2 cups cooked chicken, shredded (I chopped it finely)
2 medium avocados, diced
2 tbsp lime juice fresh squeezed
salt to taste
1/4 cup thinly sliced scallion (green onion)
1/2 cup finely chopped fresh cilantro
2 tbsp light mayo
Directions: Shred or cut chicken to adequate amount. Dice avocado. Mix with 1 tbsp lime juice. Season with salt to taste (remember, you can always add more later). Slice scallions thinly and chop cilantro. Mix all together with mayo and 1 tbsp lime juice. Serve or chill!
Now knowing how avocados turn brown, I decided not to include them right away because I will be eating this all week. I decided to only add the avocado as I eat the chicken salad. I tried it today though and it is delicious! I usually make my chicken salad very simple, and it was a great way to spice it up a little. Stay tuned for the other dish I made today!
