Spicy Sriracha Cauliflower Mac N Cheese

Every once in a while, I still enjoy a good, hearty, all-american meal. Sometimes you just need a pizza, a cheeseburger, or a bowl of mac n cheese. This particular evening was one of those days... Those days where all I wanted was a big ol' bowl of mac n cheese! I was inspired by a recipe I found, and tweaked it a little to go with the ingredients I had. This was a really easy dish to make; and I purposely made extra so I could eat it again for lunch later that week. The flavors all melded together to make one big BAM in every bite. It may not be the "traditional" mac n cheese your mind would gravitate towards, but it satisfied the craving!!


gluten free // vegan
Ingredients
gluten free elbows - I used ancient harvest quinoa "pasta"
1/2 head cauliflower
1 tbsp olive oil
zesty carrot sriracha hummus
1/4 small sweet onion
garlic clove
salt & pepper to taste
red pepper flakes
fresh grated parmesan cheese (optional, leave out for vegan)

Directions: Dice cauliflower into small chunks. Drizzle in oil. Roast in the oven on 400 degrees for 35 minutes. Once cooked, add to food processor with hummus, onion, salt, pepper, red pepper flakes, and 1 clove garlic.
