Skinny Broccoli And Cheese Stuffed Chicken, Crispy Baked Parmesan Green Bean Fries

I made this meal about 2 weeks ago, and just haven't had the time to post it. It was a light and refreshing dish for just one. I modified it a bit to suit. Broccoli and cheese anything is great!!

Ingredients:
3 large boneless, skinless chicken breasts (I used just one, and sliced it in half to make two filets)
1-2 cups cooked chopped broccoli
3 wedges laughing cow cheese (I goofed on this and left it off my grocery list, so I used fat free cream cheese)
1/4 cup panko bread crumbs
1/4 cup whole wheat breadcrumbs
1 tbsp italian seasoning
1 tsp pepper
1 tsp salt
2 egg whites
6 toothpicks
spray oil (optional)

Directions: Preheat oven to 350 degrees. Slice chicken breasts length wise into 2 equal cutlets, making 6 total. Line cookie sheet with parchment paper. Put egg whites in shallow dish, set aside. Mix panko crumbs, whole wheat bread crumbs, italian seasoning, salt, and pepper in separate shallow dish and set aside. Open the Laughing Cow cheese wedges. Spread one piece onto each cutlet. Add cooked broccoli on top of the cheese. Roll cutlet as tightly as possible. Secure with 1-2 toothpicks. Take cutlet and brush with egg whites. Place chicken into bread crumb mixture to cover. Place cutlet seam side down on cookie sheet. Repeat. Spray lightly with oil. Bake for 20-25 minutes. Good idea to serve with leftover broccoli!

Crispy Baked Parmesan Green Bean Fries

Ingredients:
4 cups fresh green beans
1/4 cup grated parmesan cheese
1/2 tsp garlic powder
1/4 tsp salt
1/8 tsp pepper

Directions:
Preheat oven to 425 degrees. Line baking sheet with foil, spray with non-stick cooking spray. Wash green beans and snip off ends. Place green beans on sheet, make sure none are overlapping. Sprinkle seasonings and parmesan cheese over green beans evenly. Place in oven and bake for 10-15 minutes, until golden brown and crispy. Broil for an extra 1-2 minutes to make extra crispy.

Feedback on this one: I found that the cheese mixture did not stick to the green beans. It had great flavors, but I had to work to scoop up the mixture with each bite of bean. I would recommend using something to make it stick to the beans, either just water, or maybe even a tiny bit of olive oil.
