I know, I know... Me, posting overnight oats? Never! Hey, consistency is key... There's nothing wrong with a girl that knows what she likes. Afterall, I am sharing it with all of you. I won't go on and on about how ridiculously easy and yummy overnight oats are (but if you haven't already heard my shpiel you should TOTALLY go back a few blog posts and check it out).

Ingredients:
1/3 cup plain greek yogurt
1/2 cup bob's red mill gluten free rolled oats
2/3 cup unsweetened coconut milk
1 tbsp chia seeds
dash of vanilla extract
pinch of salt
1 tbsp honey
1 large carrot, shredded
handful of raisins
handful of crushed pecans
1/2 tsp ground cinnamon
Combine all ingredients. Place in mason jar, seal, and refrigerate overnight.
